Plant based sausage and veggies


At times, I find myself repeatedly eating the same dishes. Recently, I experimented with a new recipe and am absolutely obsessed with it! 😋

2 cups sweet potatoes cut and cubed

1 medium broccoli head cut into florets

2 bell peppers

1 package Beyond Sausage sliced

1/4 cup olive oil


Seasoning:

2 Tablespoons smoked paprika

2 Tablespoons garlic powder

1 tablespoons onion powder

1 teaspoon thyme

1 teaspoon salt

1/2 teaspoon cumin

1/4 teaspoon allspice


TONS of cayenne! I LOVE heat❤️


1. Preheat oven to 400 F.

2. Toss veggies, sausage and seasoning in a small bowl, then place mixture spread out on pan.


3. Bake for 35 minutes until veggies are crisp and sweet potatoes are soft.


4. Serve over quinoa.
